Not all items will be available all the time. Those specific to timers will only be available when right clicking over a timer.

New timer: Creates a new timer for the time displayed in the
status bar in the second panel.  Places it at the cursor position.
Cut: Cuts the active timer to the clipboard. You can't cut fully locked timers.
Copy: Copies the active timer to the clipboard.
Paste: Pastes a timer from the clipboard at the cursor position. Any
Locks are removed from the pasted timer.
Delete: Deletes the currently active timer.

Refresh:
Refreshes the display. This is sometimes desirable for long time periods where the low sampling rate results in the display only being refreshed once every five seconds.
Send to back: Allows you to send a timer to the back. This makes it easier to select timers otherwise hidden by timers in front. If the selected timer belongs to a group, all timers in that group will be sent to the back. Holding the "i" key down (stands for inhibit) will prevent this behavior.

Title:
Applies a title to the timer in question. This is displayed in the title bar of the alarm dialog, the timer hints and on printouts of schedules and events.

Message (formerly 'Caption'): Brings up a dialog where you can enter the text as displayed in the hint and dialog alarm. Can also be set in the
Properties dialog.

Group name: Allows you to assign a group name to a timer. Timers with  the same group name will move as a group. Can also be set in the
Properties dialog see also Moving timers

Launch parameters: Brings up a dialog where you can enter a program or URL to run when alarm type launch is selected. Can also be set in the Properties dialog.

Phone number: Brings up a dialog where you can set the phone number used when the 'Phone' alarm type is used (requires a dialup modem). Can also be set in the
Properties dialog.

Sound: Brings up a dialog where you can set the sound used when the 'Sound' alarm type is used. Can also be set in the
Properties dialog.

Time: Opens up the
Timer Time dialog for setting the time. Setting times is usually easier using the mouse or keyboard except for exceptionally long time spans or where precise times are needed.

Alarms>PC Sound|Phone|Dialog|Launch: Allows you to select which sort of alarms to run when a timer fires.

Properties:
Brings up the
Timer properties dialog where you can set the name/caption and time.
